
So when it comes to pasta me and my Son are madly in love with white sauce that is Alfredo. And believe me although it looks pretty simple I had to experiment a hell lot to arrive at the right taste. Although, the sauce and pasta prep is very personal still this simple and easy white sauce pasta is sure to tickle your taste buds. Especially considering how easy it is to make do give it a shot and let me know.
Ingredients ( Serves 4 | Total time taken 20 min):
– 4 medium sized bowls of pasta (I prefer the fusilli variety)
– 1 big onion cut to small pieces
– 1 bowl of mushrooms cut to small pieces
– 1.5 capsicum cut to small pieces
– 1/2 bowl of broccoli cut to small pieces
– 1-1.5 cups milk (about 150 ml)
– 5-6 tbsp mayonnaise
– 1 tbsp oregano
– 1 tbsp black pepper
– 1 tbsp red chilli flakes
– salt to taste
– Olive oil
Recipe:
1. Take a saucepan. Add water such that the pasta stays submerged inside. Add little salt to the water such that water is mildly salty in taste. When the water starts boiling at a high flame add the raw pasta to the water and leave the flame at high for 10 min.
Then reduce the flame to low and let the pasta cook for another 5 min. Take out 1-2 pasta with a spoon and check if pasta is cooked properly.
2. Once the pasta is completely cooked. Strain the pasta using a strainer and run the pasta under cold water evenly for about 2 min. Then add 1 tbsp olive oil to the pasta and mix by gently tossing the strainer.
3. While the pasta is cooking, take about 1.5 tbsp olive oil in a wok and stir fry all the veggies. You can add more veggies as per your taste.
Add some salt and stir fry at medium-high flame for about 10 min till the veggies are cooked.
4. Add the cooked pasta to the wok. Then add the spices that is black pepper, chilli flakes and oregano. Adjust the spices as per taste.
5. Add the milk (little at a time) and then add the mayonnaise. Mix the pasta well and let it cook at a low-medium flame till the sauce consistency is to your desired level.
If you like the sauce to be thinner add more milk and mayonnaise. Taste for salt and the spices. And serve your Pasta Alfredo piping hot 😊.
