R – Roasted Chicken

This is one of the easiest and tastiest dishes of chicken ever which somehow we always end up ordering at restaurants. So, after some trials and variations of marination I zeroed upon this perfect chicken roast or chicken tandoori whichever way you call it.

This can be made both on the stove or in the microwave. But you end up having slight variations in taste in both the methods. However the guarantee is that whichever method you adopt you will not be able to decide between the tastes as to which tasted better 😊.

So, here we go with the recipe.

Ingredients : ( Serves 4 | total time taken 12-15 min per piece ):

– 4 chicken tandoori pieces medium sized

– 1 cup curd (100 ml)

– 1 raw egg

– 2 tbsp ginger garlic paste

– 1.5 tsp tandoori chicken masala powder or chicken masala powder

– 1 tsp red chilli powder

– 1 tsp crushed black pepper powder

– salt to taste

– kosher salt to taste

– 1 tsp chat masala powder

– 1 tsp cumin powder

– 1.5 tsp coriander powder

– 1 tsp garam masala powder

– 3 tbsp tomato sauce (any variety is fine)

– 1 tbsp red chilli sauce (optional)

– 1/2 a lemon

– Oil/ghee for frying about 6 tbsp

Recipe:

1. Take the chicken pieces in a flat bowl. Make cuts on the pieces using a knife.

2. Mix all the ingredients specified above (except for lemon) in a separate bowl. Smear the chicken pieces on all sides generously with the marination paste.

Marinate the chicken overnight by placing the smeared chicken pieces bowl in the refrigerator.

3. Take a big kadai (or a roasting pan) and heat the oil/ghee. Once the oil/ghee is hot enough put the marinated chicken piece one at a time. Shallow fry on both sides (about 6-7 min each) at a medium-high flame. You can cover the kadai but do not cover for more than 2-3 min at a stretch so that chicken doesn’t get soggy.

If using microwave then take one piece of the marinated chicken at a time in a microwave safe bowl. Sprinkle few drops of oil/ghee on the chicken. Place the bowl at convection mode for 7-8 min each side.

Using ghee instead of oil to fry the chicken gives a rich aroma and taste to the same.

4. Squeeze lemon juice and serve the roasted chicken pieces with mashed potatoes and stir fry veggies on the side.
