Roasted Carrot Masala Stir Fry

No one likes to have carrot in my house :/! Well, I don’t blame them I am myself not a great fan of it either. So when S got a whole packet of carrots and they were near about to spoil I had two choices. To make gajjar halwa or to experiment with stir fry. And as the bandwagon of health health health has been going on all around lately I decided to experiment with the masala stir fry using some spices. And I must say I was pleasantly surprised with the results. Considering that everyone finished up all the stir fry that I made I guess the experiment was quite successful 😁.

So, here goes the recipe. Short and simple yet surprisingly tasty!

Ingredients ( Serves 4 | Total time taken 35 min):

– Carrot 250 gm cut into medium-thin rounds

– Sunflower Oil 4 tbsp

– Hing 2 fat pinches

– Carom seeds 2 tbsp

– Coriander powder 1.5 tbsp

– Red Chilli powder 1 tbsp (more if you prefer spicy)

– Crushed black pepper 1 tbsp

– Salt to taste

– Kosher salt 1 tsp

Recipe:

1. Add oil to the pan and once the oil is hot enough add the cut carrot rounds. Sprinkle some salt and fry for 5 min. Cover the pan stiring the carrots in between till they soften. This takes about 10 min.

2. Take off the cover and turning the flame to high continue to fry the carrots till all the moisture evaporates. Continue to stir fry till the carrots get a bit charred (this adds to the taste). This entire frying process takes about 15-20 min.

Remove the fried carrots to a bowl.

3. In the same pan add about 1.5 tsp of oil and add all the spices that is hing, carom seeds, coriander powder, red chilli powder and crushed black pepper. Keep the flame at low so that the spices do not burn. Fry the spices for about 30-40 seconds. Sprinkle some water to the spices such that the spices make a liquidy solution (don’t add too much water) .

4. Add the fried carrots to the spices mix and turn off the stove. Give the carrots a proper mix such that all the spices mix well and form a coating. Taste for salt. Sprinkle kosher salt to garnish.

There you go your roasted carrots masala stir fry is all ready to be gobbled up 😊.
