D – Devil Egg

My entire family loves eggs in any form, be it just boiled, scrambled or fried. So, I never have to work too hard when it comes to cooking eggs.

But the other day when I was left with some aloo bhurta and nobody was willing to have it on the next day I tried out this simple dish. It isn’t exactly the egg daredevil recipe but an easier version of it and that’s why I have taken the liberty to remove the word ‘dare’ from the name 😊.

So here we go:

Ingredients:

1. Boiled eggs 3

2. 2-3 big boiled potatoes

3. 1 big onion sliced small

4. 1/2 tsp mustard seeds

5. 1/2 tsp cumin seeds

6. Kosher salt to taste

7. Salt to taste

8. Green chillies sliced small as per taste

9. 1 tsp chat masala powder

10. 1 pinch asafoetida or hing

11. 1 inch ginger sliced small

12. 3 cloves garlic sliced small

13. Coriander leaves

14. Bread crumbs

15. Mustard oil

16. Vegetable oil

Recipe : (Serves 3 | time taken 40 min)

1. Take some mustard oil in a pan. Once the oil heats up add mustard seeds and cumin seeds. Allow them to splutter.

2. Add the sliced ginger and garlic. Add hing to this and fry for about a minute or two till the raw smell goes.

3. Add the cut onions and fry till they turn translucent. Add the sliced green chillies to it.

4. Mash the boiled potatoes and add to the pan. Add the kosher salt, salt and chat masala powder. Mix them well.

5. Garnish with coriander leaves as much or as less as per your taste and keep aside the potato filling to cool down completely.

6. Take sufficient oil in a pan for deep frying. Heat up the oil and then reduce the flame to medium.

7. Take one boiled egg and make a vertical parting with knife so that it does not burst while frying due to steam built up inside.

8. Coat the egg with the potato filling on all sides making a thick layer and roll it in a bowl of bread crumbs. Deep fry the coated egg in the oil. Repeat the steps with other eggs. All the coated eggs can be deep fried simultaneously in the pan.

Slice the fried Devil Eggs into halves and serve them with red tomato hot and sweet chilli sauce 😊.
