Ice cream – Vanilla flavored

I scream, you scream, we all scream for Ice Cream!

Good ice cream is always relished. During hot days, a scoop of ice cream provides such respite! And if it were a simple recipe with just a couple of ingredients and homemade, nothing like it! Today, I bring to you a simple ice cream base recipe with just two ingredients. That’s right, two ingredients only! With this base, you can make any flavor of ice cream you choose. I made good old vanilla flavored ice cream here.

I love good quality vanilla. Especially with some vanilla bean specks and hint of the flavor wafting around. Whenever I visit the freezer section of a supermarket, I typically search for vanilla ice cream. I have managed to find fault with most brands. But now that I have found a very easy recipe, I do not see any reason to continue my search. It is that simple and yummy!

So, a rundown of the recipe – you need a cup of heavy cream, something that has more than 35% fat and some condensed milk. That is it! That forms the creamiest, fluffiest base. And to flavor it, you need some good quality vanilla extract (and beans if you have – totally optional). In terms of equipment, you need a big bowl to whip the heavy cream in, a whisk/hand mixer and a spatula. Store it in a freezer safe container. Told you, could not be easier!

Another good thing about this recipe is that it is easily scalable for larger batches. For larger batches, a hand mixer or stand mixer is your friend. 😉

Equipment

Hand mixer/whisk – 1

Large-ish bowl – 1 (I would suggest going up to 2 liters capacity at least)

Flat spatula – 1

Freezer safe container – 1 liter capacity

Ingredients

Heavy cream – 1 cup

Condensed milk – 5-6 tbsp

Vanilla extract – 1 tsp

Time taken – 10 minutes + 4 hours of freezing time

Recipe

  • Pour the heavy cream in the bowl to whip it up.
  • Get whipping to soft peaks stage. You need not whip it to stiff peaks. I whisked it by hand and took me about 8 minutes
  • Gently fold in about 5 tbsp of condensed milk in first. Check for the taste. Add more a tablespoon at a time.
  • Add the teaspoon of vanilla now and gently fold in.
  • Transfer to the freezer safe bowl and level it.

  • Let it freeze for about 4 hours
  • Then scoop it into serving bowl and enjoy!
And that’s the vanilla ice cream!
