
Yes you read it right, home made lasagna! Have you already started thinking no it must be really tough and impossible to get the layers etc etc. Relax. This easy recipe of lasagna takes maximum 45 min with all layers cooked, tasty and intact 😊.
Let’s get started.
Ingredients (Serves 3 | total time taken 45 min):
For the sauce and base
– 1 big onion
– 1 baby carrot or 1/2 big carrot
– spring onion green (optional)
– 3 medium sized tomatoes
– 250 gm minced boneless chicken (or you can also grind boneless chicken )
– 3 tbsp frozen green peas (optional)
– 1.5 tbsp minced garlic (or fresh garlic grinded to a paste)
– Shredded mozerella cheese
– Freshly crushed black pepper to taste
– Salt to taste
– 1 tsp red chilli powder
– 1 tsp Oregano
– 1 tsp red chilli flakes
– 1 tsp sugar
– 250 gm all purpose flour or maida
For the sheets (or you can skip this step by using pasta sheets) :
– salt to taste
– veg oil 1 tsp
– water
Recipe:
Making the sauce and the base
1. Take 2 tbsp olive oil in a pan. Add minced garlic to the oil and fry till the garlic paste turns slightly brownish.
2. Grind the carrots, onion and spring onion greens to form a coarse paste. Add the coarse paste to the pan. Fry at medium-high flame for about 5 min.
3. Grind the tomatoes to form a smooth puree. Add the tomato puree to the above.
4. Add sugar, black pepper, salt and red chilli powder to the above paste. Mix well. Turn the flame to low-medium and let the sauce cook till it turns to a semi thick paste. This takes about 10-12 min.
5. Add the minced chicken to the above sauce. Add salt, black pepper, oregano, chilli flakes. Add the frozen green peas. Mix well. Cover and cook at a low-medium flame for 15 min or till the chicken gets cooked.
You can taste the sauce once cooked and add more seasonings to your taste.
Making the sheets
1. While the sauce is getting cooked. Take the all purpose flour. Add some salt and 1 tsp veg oil and make a smooth dough pouring water from time to time.
2. Make small balls of the dough and roll the sheets thin of the size of pasta sheets. You would need 3-4 sheets in total.
3. Take 1-2 cups water in a sauce pan. Add 1 tsp salt and 1 tsp veg oil to it. When the water starts boiling dunk 1 pasta sheet at a time for 3-4 min each.
4. Once the pasta sheet is cooked dunk them in a bowl of cold water immediately, one at a time, for 30 seconds. Then remove and place the sheets on a plate.
Ensure not to place the sheets one above the other so that they don’t stick to each other.
Arranging the lasagna layers
1. Take a microwave safe glass bowl. Using a spoon make 1 layer of the sauce as the base.
2. Add shredded mozerella cheese on the top of this layer.
3. Place 1 pasta sheet. Add seasonings as per your taste. You can also add some raw minced garlic for additional flavour.
4. Add another layer of the sauce. To this add one layer of pasta sheet. Add one layer of mozerella cheese.
5. Repeat the layering till the last layer. The top most layer should be a mix of sauce and mozerella cheese above the layer of pasta sheet. Sprinkle with seasonings of oregano and chilli flakes as per your taste.
Cooking in microwave/ stove
Place the glass bowl with all the layers in the microwave. Cook at 900 degrees centigrade for about 8 min or till the cheese melts.
Alternatively you can make the layers in a non-stick bowl and cover and cook on the stove for 8-10 min on a low-medium flame till the cheese melts.
