Undrallu

Undrallu, steamed rice flour balls offered to Lord Ganesha. This is something typically made for Ganesh Chaturthi and is eaten with a strong chutney, like ginger chutney. The rice flour is made at home too for this festival offering.

This preparation requires just a few ingredients – rice, water, salt, chana dal and cumin seeds. Have an idli steamer handy to make these. I will list out the steps to make the rice flour too here. If you would rather use rice rava, you could do that too.

Ingredients

Rice – 1 cup

Water – to soak + 2 cups to cook in + for steaming

Salt – to taste

Chana dal – 1 tbsp

Cumin seeds – 1 tsp

Oil – to brush idli molds

Recipe – makes 24 undrallu

To make Rice flour

  • To make rice flour, soak the rice in some water – about 1.5 cups of water – for about 20-30 minutes
  • Now spread it out on a cotton towel in a thin layer and let it dry overnight or at least 4-6 hours.
  • Now coarsely grind this dried rice, if parts of it is powder while some pieces remain, that’s perfect. Rice rava ready

To make Undrallu

  • To a pan, add in 2 cups of water, a pinch of salt, chana dal and cumin seeds
  • Let this concoction come to a rolling boil.
  • Now add in the rice rava and stir is quickly. It doesn’t form lumps like sooji does, so its easier.
  • The mixture would thicken now. Turn off the flame when it is almost upma consistency. Cover and let it rest for about 2-3 minutes

  • Undrallu should be made when the rice rava is still hot. So wet your palm and take a lemon sized portion and form it into a ball.
  • Similarly, make rounds of the rest of the hot mixture.
  • Grease an idli mold and put these in. You can overload these on the mold, that just fine
in idli mold
  • Now, steam these in the idli cooker for 10 minutes. The rice rava will be perfectly cooked now.
  • Serve these with a chutney or pickle
