
Andhra pappu chakkalu, one my favorite snacks ever! These are rice flour based snacks that can be customized to suit anyone’s taste buds. Here I present you the version we love and make most often at home. Read on for ingredients and steps to prepare these.
Ingredients
- Rice flour – 4 cups
- Melted butter – 4 tbsp
- Curry leaf – 4 sprigs
- Senaga pappu/Bengal gram – 3 tbsp soaked for an hour
- Jeera – 2 tbsp
- Ginger – 2 inch knob
- Chillis – 4
- Salt – to taste
- Water – enough to make a dough
- Oil – for deep frying
Steps
- Soak bengal gram in water for about an hour before making the dough
- Melt butter if solid
- Grind the curry leaf, ginger and chillis into a coarse paste
- Mix rice flour, butter, soaked bengal gram, curry leaf – ginger – chillis paste, jeera, salt and water to make a semi-dry dough. Test for this is, if you pinch a small amount and try to flatten it, it should crack at the edges.
- Heat up oil
- Pinch off about 2 tbsp of dough and flatten on a plastic sheet or silicone baking sheet. These should be of medium thickness. Make a few of these.
- One the oil is hot, reduce the flame to medium and drop in a few raw chakkalu into the oil. Once they turn golden brown, turn to the other side and fry to golden brown.
- Remove to a plate to cool for a few minutes and store them in an airtight container.
