
How many times have you forgotten to soak almonds overnight? Well, I always do. Very rarely I remember to soak them and that results in me feeding just walnuts to the family as a substitute. As you guessed it, walnuts don’t need soaking! So, for all those forgetful ones like me who believe in the goodness of dry fruits but aren’t able to maintain or fit them all in the routine this ladoo comes as a saviour.
The dry fruits ladoo is a combination of all the dry fruits sweetened with jaggery and dates. One ladoo in the day and you have tick marked against the required quantity of dry fruits intake. And what more, you even have added iron to the kitty alongside a variety of nutrients in one go!
Ingredients (1 cup about 100 gm) :
– 1/2 cup almonds
– 1/2 cup walnuts
– 1/2 cup cashews
– 1/2 cup pumpkin seeds
– a handful of raisins
– 1 cup dates
– 3/4th cup jaggery
– 3-4 tbsp ghee/clarified butter
– 1 tbsp ginger powder (optional)
– 1 tbsp sesame seeds (optional)
Recipe ( total time taken 15-20 minutes) :
1. Soak dates in warm water for 30 minutes and blend to form a smooth paste.
2. In a pan add all the dry fruits (you can choose more variety of dry fruits than in the list),pumpkin seeds and sesame seeds. Dry roast for about a minute or two to ensure no moisture remains in them.
3. Take all the roasted dry fruits and seeds mix in a blended and pulse for just 1-2 times. Do not powder the mix. Pulse only to crush the mix to small pieces. Few large chunks are ok.
4. In the pan add ghee. Then add the jaggery and melt it at low-medium flame. As soon as jaggery melts add the dates. Give it all a good mix and then add the crushed dry fruits. Add ginger powder. Mix everything well and switch off the stove.
5. Let the mixture cool down a bit. Once it is Luke warm start making the ladoos. If ladoos are not binding add ghee as needed.
Store the dry fruits ladoos in an airtight container in the refrigerator and enjoy them.
